Wub To die for mashed potatoes

These are so unhealthy that I'll only make them once a month, but they are soooo good. As a bonus, if you have leftover cubed ham throw it in and serve as a meal.

6 large potatoes (2.75 pounds) peeled and sliced
1 Med. onion chopped
1 (8 ounce) package cream cheese, softened
1/2 cup plus 2 tablespoons butter, divided
1/2 cup sour cream
1 large egg, beaten
1.75 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika

1. Combine potatoes, onion, and enough water to cover in saucepan. Bring to boil and reduce heat to medium. Simmer until tender (about 20 minutes) and drain well. Preheat over to 350 and grease a 3 quart baking dish

2. Combine potato/onion mixture, cream cheese, 8 tablespoons butter, sour cream, egg, salt, and black pepper in a large bowl. Beat with electric mixer on high until smooth.

3. Spoon mixture into baking dish. Dot with remaining butter and sprinkle with paprika.

4. Bake until heated through (about 30-35 minutes). Serve immediately.

These are to die for.... ...I make some similar and you can use red onion,green,regular spanish or even chives!!!(dh is not a big fan of mashed potatoes but :love: these)

OMG! Those sound amazing. They also sound like you should have a defibulator on hand to get your heart pumping again after you eat. LOL I will definitely have to try these.
