Default Spanish Rice

This goes great with tacos or any other Mexican entree. I have a yummy recipes for chicken enchiladas I will get posted as soon as I can.

2 tablespoons of shortening
1 cup white rice
2 cloves of garlic minced
1 medium onion, chopped
1 (8oz) can of tomato sauce
1 1/4 cup chicken broth
2 tablespoons chili powder
1/2 teaspoon salt

Heat shortening in a large skillet (one that has a lid) over medium heat. Add rice and stir until rice is browned. Add garlic and onion, stir until the onion begins to brown. Stir in tomato sauce, broth, chili powder, and salt. Bring to a boil, than reduce heat to low, cover and cook for 20-25 minutes or until the rice is tender. Let stand for five minutes before serving.

Honestly, I dont know. I have never used brown rice. If you have substitued it for other recipes that call for white and it turns out good, than I dont see why. Sorry I was not more help.

acording to my mother NO, but she is an old Mexican woman who just about had a heart attack when I suggested heart healthy alternatives to making tortillas. sorry, I have just never tried.
I do use vegetable oil instead of shortening. I also use cumin instead of chili powder. othewise this is how I make it. sometimes I also add peas and diced carrots.

My whole family is Mexican , so I think that is why I have never even thought of using brown rice. It is forbiden to mess with some recipes. Your recipe sounds good too. I rarely have shortening around the house, so I too will use vegetable oil.
