Zucchini for us is like corn on the cob....after a while you gotta change it up a little so heres all my and family favorites for one of OUR favorites.

Zucchini Sticks(kids like these cause they look like fries)
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
1 med zucchini
2 large eggs, beaten
2 Tbs milk
3/4 c flour
1/2 tsp season salt
3/4 c cracker crumbs(reg not ritz)

Wash and cut zucchini(DON PEEL)

Cut zucchini into about 2 1/2" long by 1/2" thick strips.

Beat eggs and milk well(foamy)

In a ziploc bag, add flour, seasoning salt and shake well.

In another bag, add finely crushed crackers.

Dip zucchini strips in egg mixture,drop into flour mixture and shake well to coat.
Dip again into egg mixture,drop into crushed crackers and shake well to coat.

Heat olive oil to 400. Fry turning once(you want em golden brown)
Zucchini should be crunchy

I serve this w/bernaise sauce...recipe already posted in frugal or just buy the pack.


Garlic Dip(a diff dip for above recipe)

1 c buttermilk
1 c mayo
1 (1oz)ranch dressing mix
3 garlic cloves, minced
Just whisk all and refrig


Stir Fry Zucchini:love:
~~~~~~~~~~
2 medium zucchini
1/2 tsp salt
1 Tbs soy sauce
2 tsp hoisin sauce
2 tsp dry sherry
1/2 tsp sesame oil (I :love: sesame oil)
1 Tbs canola oil
1 tsp minced garlic
1 tsp chili flakes
1/2 tsp sesame seeds, toasted (opt)

Quarter zucchini lengthwise. lice off the soft seed core.
Arrange the zucchini, cut side up, on paper towels.
Sprinkle with salt, set aside for 10 mins.

Blot the zucchini quarters dry with paper towels.
Cut quarters into 2 inch lengths.

Mix soy sauce, hoisin, sherry and sesame oil in a small bowl.

Heat skillet over med-high heat for 1 min.

Pour in canola, when oil is VERY hot add zucchini.

Saute until zucchini browns and softens (about 3-4 min and DONT OVERCOOK )

Add garlic and chilli flakes, saute for about 15 sec.

Add the sauce mixture, stir and cook just long enough for liquid to reduce and coat the zucchini(this only takes a few seconds really 10-15sec)

Sprinkle with toasted sesame seeds and serve.
