My sil made this for our family barbecue tonight and it was EXCELLENT! I was so surprised to see it right away on here! My dh likes spaghetti salad, which is similar, for some reason, I liked this better.

I made this yesterday, but made a few changes...here is what I did:

1 pkg tricolor pasta
1 bottle Italian Salad dressing
1 red onion, chopped
1 package pepperoni, I quartered the slices
1/2 C shredded parmesan cheese

to vary it up a little try a sun dried tomato dressing and some fresh grated parm cheese also........yum

I am going to make this for dinner tonight. I will also change a couple of things. I am leaving the green onions out since the kids don't like them. I am adding a yellow pepper along with the cucumber because I have one I need to use, and I am using turkey pepperoni (70% less fat than real pepperoni and it is all my kids ever get so they don't know what they are missing!) and Newman's Light Italian dressing. I will report back tomorrow.

I forgot to follow up - it was delish! I enjoyed the leftovers for 2 days and it just got better. The only one that didn't like it was my 2 year old but he had never had cold pasta before so he was a little thrown off. Dh and the 7 year old loved it. I will definitely make it again. I served it over a huge plate of mixed greens and there was plenty of dressing on the pasta salad to coat the lettuce. Very satisfying summer meal.
