My Dad loves homemade mac n cheese so I usually make this on occasion that are for him(fathers day bday-etc)

1 Tbs vegetable oil
1 (16oz)elbow macaroni
9 Tbs butter
1 c shredded mozzarella cheese
1 c shredded mild cheddar cheese
1 c shredded sharp cheddar cheese
1 c shredded Monterey Jack cheese
2 cups half-and-half
8 oz cubed velveeta
1/4 tsp salt
1/4 tsp pepper


Boil pasta 8-10 min and drain

Over medium heat, melt 8 tablespoons butter; stir into the macaroni.

Mix cheese, mild and sharp Cheddar cheeses, and Monterey Jack cheese; mix well.
Preheat oven to 350.

Add the half and half, 1 1/2 cups of cheese mixture, cubed processed cheese food to macaroni,mix and add salt and pepper.

Transfer to a lightly buttered 2 1/2 quart casserole dish. Sprinkle with the remaining 1/2 cup of cheese mixture and 1 tablespoon of butter.

Bake in preheated oven for 35 minutes til bubbly.

and as far as just stir in ideas for a box mix:

stewed tomatoes
leftover taco meat
leftover chili(chili mac)
steamed broccoli
frozen peas
cut up hot dogs

Tuna Noodle Casserole-

Make a box of macaroni & Cheese according to directions then add in 1/2 bag of frozen peas and 2 small cans of tuna!

That is my quick version of it:love:

When we were super poor, one of our favorite creations we came up with was called White Trash Casserole.

2 boxes of mac & cheese
1 lb of ground beef
1 can ranch style beans

Cook mac and cheese according to the directions. Cook ground beef. Mix all ingredients together.

It's really, really good. And even good cold. We'd eat this for days!

you won't have left overs with this one:

MAC & CHEESE

4 cups elbow macaroni
1/2 c butter or margarine
1/2 c flour
salt pepper to taste
5 c milk (i think whole milk is best for this recipe)
4 c shredded cheddar chz
1-2 cups bread crumbs or crushed corn flakes

heat oven to 350, cook pasta & drain. In large saucepan over medium heat melt butter, blend in flour/salt/pepper; gradually stir in milk. Cook stirring constantly until sauce thinkens & mixture begins to boil. Add chz & stir until melted. Mix together pasta & chz sauce, pour into 9X13 or casserole pan, top with corn flakes . Bake for 30 mins.

enjoy--it's delicious ) my kids love the crunchies on top.

My dh adds diced ham and any kind of crushed up left over potato chips to the top. He bakes it just until the chips stick to the cheesy noodles. The kids love it and call it "Daddy's Speciality". HA! Wish MY specialties were that easy!

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Sharp Cheddar Cheese Sauce
1 lb. ground beef
1 jar (14 oz.) spaghetti sauce (about 1-1/2 cups)
1/2 cup KRAFT Shredded Mozzarella Cheese



PREHEAT oven to 375°F. Prepare Dinner as directed on package. Meanwhile, brown meat in large skillet; drain. Add spaghetti sauce to meat; mix well.
LAYER half each of the meat mixture and prepared Dinner in 8-inch square baking dish. Repeat layers. Sprinkle with mozzarella cheese.
BAKE 15 min. or until heated through.

I have not made this one, but it was in the new Kraft Food and Family Magazine. My son thought that it look yummy. It looks super easy and many ingredients you may have on hand already. Go to Kraft's website if you want to look at a picture of it.

1 lb. lean ground beef
1 pkg. (1-1/4 oz.) TACO BELLŪ HOME ORIGINALSŪ Taco Seasoning Mix
2 cups water
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 large tomato, chopped
1 cup shredded lettuce
1 cup tortilla chips, broken up



BROWN meat in large nonstick skillet on medium-high heat; drain. Add seasoning mix, water and Macaroni; mix lightly. Bring to boil. Reduce heat to medium-low; cover. Simmer 7 min. or until noodles are tender and liquid is almost completely absorbed.
STIR in sour cream and Cheese Sauce Mix until well blended.
TOP with tomatoes, lettuce and tortilla chips.
