I'm usually not a fan of these 3 bean salad recipes...but this one I just LOVE!!!!
1 med red bell pepper, chopped
1/3 med onion, chopped
1 (6oz)marinated artichoke hearts, drained and chopped
1 (12oz)kidney beans, drained and rinsed
1 (12oz)pinto beans, drained and rinsed
1 (12oz)garbanzo beans, drained and rinsed
2 ounces crumbled feta or bleu cheese
Dressing
1/4 c olive oil
1/8 c white vinegar
1/8 c balsamic vinegar
1 tsp salt
1 tsp sugar
Toss red bell pepper, onion, and artichokes together with kidney, pinto, and garbanzo beans. Set aside.
Whisk salt and sugar with white and balsamic vinegars until completely dissolved. Slowly whisk in olive oil.
Now mix all and refrig an hour or 2 before enjoying.......
