Anyone know of a good, cold, cucumber salad recipe? It can have mayo or be mayo free. I bought an insane amount today at a little farmers market just because the old guy selling them was such a sweetie. Now I have a dozen, very large cucumbers. Any ideas would be greatly appreciated. TIA.

I make 2, one is with some tomato and onion and just italian dressing, but you can make it w/just cukes.

The other is with sour cream and dill with a little vinegar. The amounts depend on how much cukes. hth!! I am overloaded w/cukes and cherry tomatoes in my garden so it's all I've been eating for the past 2 weeks. Hopefully someone else has another idea!!

In the last Kraft Food Magazine they had an awesome cucumber & tomato salad. It's called Easy Greek Tomato & Cucumber Salad. If you go to the Kraft foods website and search under cucumber, it's like the
3rd or 4th down.

ME TOO!!! I made it for a pool party this past Sat and it was awesome. The only thing one mentioned was that some fresh basil in it would have been great. Of course I have some in the garden and didn't even think of it!

HIGHLY RECOMMENDED!!!! Thanks for posting it!
