2 Tbs olive oil
3 lg sweet potatoes
1/2 tsp oregano
1/4 tsp salt salt
1/4 tsp pepper

Preheat oven to 350
Coat the bottom of a glass baking dish with olive oil, just to coat.

Wash and peel the sweet potatoes. Cut into lg cubes.

Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil.
Sprinkle w/ oregano, and salt and pepper.

Bake 60 minutes or til soft.
