Anyone have a recipe for this?? We had some at a BBQ this weekend and I really liked it. This is not the first time I have had this, but I just never thought to make it. Please share if you have a recipe. Also, give me an idea of how much your recipe makes or how many people it feeds as my family doesnt like it a whole lot, so I will have to proabably make 1/2 a batch of it just for me. Thank you!!

1 c sugar
2 Tbs flour
2 1/2 tsp salt
1 3/4 c unsweetened pineapple juice
2 eggs, beaten
1 Tbs lemon juice
3 quarts water
1 Tbs vegetable oil
1 (16oz)acini di pepe pasta
3 (11oz)mandarin oranges, drained
2 (20oz)pineapple tidbits, drained
1 (20oz)crushed pineapple, drained
1 (8oz)cool whip,thawed
1 c mini marshmallows
1 c shredded coconut

Mix sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat til thickened. Remove from heat; add lemon juice and cool to room temperature.

Bring water to a boil, add oil, remaining salt and cook pasta 8 min,til al dente. Rinse under cold water and drain.

Combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve. :happy dance:

I actually to make this and refrigerate a while before mixing all my ingred.
