dh loves this stuff.....and he's not a big potato salad fan.....




1/2 red bell pepper, diced
3 scallions, finely sliced
1 rib celery,thin sliced
1 Tbs fresh cilantro or parsley, chopped
1 c mayo
3-4 chipotle chiles in adobo,diced
1 Tbs sugar
8 slices bacon, cooked crisp,crumbled
1 (15oz)black beans, rinsed and drained
6 hard-boiled eggs, diced
8 med red potatoes, cooked, cooled and diced
1/3 tsp pepper

Mix all,chill and serve :happy dance:
