Lime Vinagrette

3/4 c. chopped tomatoes
3/4 c. cilantro
6 T. oil
3 T. cider vinegar
1 T. lime zest
2 T. lime juice
3/4 t. salt
3/4 t, cumin
3/4 t. chili powder
3/4 t. pepper
3 garlic cloves, peeled.
Mix in blender.
I used it to marinate the chicken, which I grilled on the George Foreman, then as a dressing for a Southwestern salad (greens, corn, black beans, tomato, green onion, lime juice, chicken, cheese)
