Stovetop Summer Squash

1 2/3 Cup Water {the Recipe Calls For Water, But I Use Chicken Broth}
1 Pkg. {6 Oz.} Stuffing Mix With Herb Seasoning Packet
3 Tbs. Butter
1 Cup Chopped Onion
1 Cup Red Bell Pepper
1 Tbs. Minced Fresh Basil
2 Cups Yellow Squash {sliced}
2 Cups Zucchini {sliced}
Bring Water {or Broth} To A Boil In 2 Quart Saucepan. Add Seasoning Packet From Stuffing Mix; Cover And Cook 15 Minutes Over Low Heat. Meanwhile, Melt Butter In Large Skillet Over Medium Heat. Add Onion And Bell Pepper; Cook And Stir 3 Minutes Or Until Tender. Add Basil, Squash And Zucchini; Cook And Stir 3 Minutes Or Until Vegetables Are Tender. Transfer Squash Mixture To Saucepan With Seasoning Blend. Add Stuffing Croutons; Mix Until All Liquid Is Absorbed. Remove From Heat; Cover And Let Stand 5 Minutes. Fluff With Fork Before Serving. Makes 6 servings
