Default I need a good twice baked potato recipe

We don't usually eat many potatoes, but someone gave dh 20# (she sent her dh to the store for 3 5# bags and he got 3 20# bags!). So dh thought he would like some twice baked potatoes. I can probably figure something out, but if you have a good tried and true recipe, it would be easier!

This is my mom's recipe and our family loves it!

6 baking potatoes (brown ones)
1/4 C butter
1/2 C cheddar cheese
1/4 C (approximately) milk;heated
1/4 C sour cream
Salt and Pepper

Bake potatoes in oven for one hour. Remember to pierce w/ fork before baking. Once they are done, slice lengthwise and scoop out the potato into a bowl. Save the skins. Beat the potatoes w/the milk and butter as you would mashed potatoes (electric mixer or potato masher). Add the sour cream and 1/2 the cheese; stirring until well mixed. Scoop the whipped potatoes back into the potato skins. Top w/remainder of the cheese. Broil under low heat until heated and cheese is melted.

These are by Paula Deen from Food Network. I don't like shrimp so I make them w/ 1 pound cooked and crumbled bacon instead. My MIL makes them with the shrimp and then always leaves the shrimp out of some for those of us who don't like shrimp.

I love them (epecially with the bacon). Everyone loves them when my mil makes them w/ the shrimp too!

6 large Idaho potatoes
Vegetable oil, for coating
8 tablespoons butter
2 cups grated cheddar cheese, plus more for sprinkling
2 cups grated Monterey Jack
2 cups sour cream
Salt and pepper
1 pound shrimp, peeled and Sauteed (Or 1 pound cooked and crumbled bacon) I'm sure you could add both too.
Paprika

Preheat oven to 350 degrees.
Begin by washing potatoes, drying them, and gently pricking them with a fork on the sides. Coat each potato with vegetable oil, place on foil covered pan, and bake for approximately 1 hour.

Place the butter in a large bowl. Remove the potatoes from the oven and slice each potato in half. Gently scoop out the potato and place in the bowl. Using a mixer on high, mix the potatoes, butter, sour cream, salt, and pepper. Fold the shrimp and both cheeses into the mixture. Gently stuff the mixture back into the potato shells, making sure not to break them. Pile the mixture as high as you can on top of the potato shells. Sprinkle each potato with cheese and paprika for color. Bake in the oven for approximately 20 to 30 minutes until browned on top.

i mix up the whites of the potatoes then add milk, butter, sour cream and then add taco meat and top with chedar cheese.

you can add just about any thing with these!
