I use mine in soups. If soup isn't on your schedule for dinners, then you can freeze them.

I reheat the rice
Add a little butter (to taste) allow to melt in warm rice
Add milk to cover rice
A little sugar or calorie free sweetner (to taste)

Eat with a spoon.

I LOVE the long grain rice, the kind that takes 40 minutes to cook. I rarely have that kind of time so I always make 2 or 3x what I need and freeze the rest in meal size portions. That way, I always have it ready. Just pop it in the microwave on defrost and a way you go!!

Depending on what we are having sometimes I will mix the rice w/ cream of mushroom soup and mushrooms and use it as a side for chicken. Other times I will make stroganoff.
