8 large potatoes, peeled,cut into large wedges
3 cloves garlic, minced
1/2 c olive oil
1 c water
1 Tbs oregano
1-1 1/2 lemon, juice of
sea salt
fresh ground pepper


Preheat oven to 400.
Put everything in a baking pan big enough to hold them.
Season w/sea salt and pepper.
Toss everything to mix and coat.
Bake for 40 min.
When nice and golden-brown,give them a good stir,season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
Add 1/2 c more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes. (about another 30-40).

I make a recipe similar to this one all the time! Greek potatoes are so yummy!

I have a similar recipe too. I think I cook mine longer - I like them really soft. Yum! I might have to make those tonight!

These sound great!

I have a question.You add the T of oregano in the beginning and then do a light sprinkle of oregano when turning them over?
