This is one I love from Pampered chef - I edited out a lot of their tool references since they love recipes chock full of tools... don't forget to toast the almonds, I think it makes or breaks this salad.
Stawberry Spinach Salad
Dressing:
1 lemon
2 TBL white wine vinegar
1/3 C sugar
1 TBL vegetable oil
1 tsp poppy seeds
Salad
¼ C sliced almonds, toasted
8 oz. (1 ½ C) Strawberies, hulled and quartered
½ medium cucumber, sliced and cut in half
¼ small red onion, sliced into thin wedges
1 package (6 oz) baby spinach
Prepare dressing – zest lemon to get ½ tsp zest, juice lemon to get 2 TBL of juice. Combine zest, juice, vinegar, sugar, oil and poppy seeds, wisk until well blended.
Mix together salad ingredients (except almonds) in large serving bowl. Wisk dressing one last time, and pour over salad, gently tossing to coat. Sprinkle with almonds. Serves 10.
