oh man...I love beets......my granparents always grew them buy the bushel fulls ..and holidays wouldnt be the same w/out harvard ones.......YUM


2 (20oz)cans sliced beets (drain,save2/3 c of juice)
1/2 c sugar
1 Tbs cornstarch
1/2 tsp salt
1/4 tsp mustard powder
1/2 c vinegar
3-4 Tbs butter
pepper to taste


In a saucepan mix sugar, cornstarch, salt and mustard powder.
Add in saved beet juice and vinegar,bring to a boil over med heat stirring constantly til simmering and thick.
Mix in the butter til melted, then add in the beets.
Season with black pepper.(i like a lot )


delish and pretty on the plate!
