Sweet Poatao Biscuits

I don't like sweet potatoes but these are wonderful.

1 1/2 cup mashed hot sweet potatoes
1 stick real good quality butter
1/2 C sugar
2TBS cream
1tps salt
3 1/4C all purpose flour (I use whole wheat flour and only 3 Cups)
4 1/2 tsp baking powder

Add butter to mashed sweet potaotes and mix until all butter is gone. Don't melt the butter it doesn't work as well. Then add milk, sugar and salt. Mix very well at this stage.

Sift flour and baking powder, add to potatoe mixture. Work lightly with hands to make dough soft. DO NOT KNEAD!! Shape dough into a flatened ball. Cover in plastic wrap and chill. Dough can be made a day early to this point.

Do not overwork the dough because it will keep it from rising.

Preheat over to 400 and place in the upper portion of the oven. Lightly grease a cookie sheet and place biscuits closely bake 15 to 20 minutes or until brown.
