Default Does anyone have a recipe for Asian/Thai noodle salad?

There's this deli salad I'm craving, but want to try and make it on my own. It has a Thai sauce, and juliened carrots and red peppers in it. Anyone have a recipe like that?

8 oz spaghetti,uncooked
1/4 c soy sauce
1/4 c peanut butter,softened in microwave a few sec
2 Tbs rice wine vinegar
1 Tbs sesame oil
2 Tbs hot sauce (you can use more or less)
2 c coleslaw mix, shredded
1 c carrots,julienned
1 red bell pepper, julienned
3 scallions, chopped
2 Tbs sesame seeds


Cook pasta 8-10 min(depending on how done you like your noodles)then run under cold water,drain well.

Whisk soy, peanut butter, vinegar, oil, sesame oil, and hot sauce.(Adjust to taste)

Add noodles and veggies,toss well.
Sprinkle scallions and sesame seeds throughout the salad.
Chill well before eating(about 4 hours)

You really cant kill this recipe......you can swap crushed red pepper flakes for hot sauce if ya like it more kick-y or add a good shot of honey to add somethin sweet(like 1/4 c) ,you can swap the noodles also and use the tradional undo or soba noodles , you can also swap un the veggies....bean sprouts are a good addition to this as well.
