I have an easy one that my in-laws just love. I just cut my potatoes into quarter then cut in half again. Just lay them out on a baking sheet then salt, pepper, and drizzle well with olive oil. And the flavor comes from fine chopping up 2-3 cloves of garlic and sprinkle over. Just pop in the oven till they get a nice crisp on them.

I love doing this... the only difference is that I mix everything in a bowl. I'll put the potatoes in the bowl, and then the spices and oil (I like using paprika on the potatoes, also). By mixing them in the bowl, it will help in the potatoes not sticking to the pan that much.
