This is my kids new favorite:

Apple Coleslaw

Combine:
1 head of cabbage, shredded
1 carrot, shredded
(or you can use the prepackaged coleslaw mix if you want)
1 granny smith apple cut into chunks (I leave the skin on)

In a separate bowl mix:

1/3 cup brown sugar
1/3 cup mayo
1 Tablespoon lemon juice

pour the sauce over the coleslaw mix then serve.
