Default cold German potato salad anyone???

I remember a store near us who always had a cold German potato salad in their deli. They are no longer open and I never see anyone else around here have it. Does anyone have a good recipe for one?
I'm having Easter and since I had Easter at my house last year along with Thanksgiving and Christmas, I'm in need of some new recipes. TIA

My grandma used to make a version of this (of course no measurements) but it was a vinegar based salad. It had a little bit of bacon grease and chopped bacon mixed with vinegar (and possibly cooked onions, I can't really remember). There may have been another ingredient but I can't remember. She cut the potatoes into thin slices (1/4") after they were cooked and then just tossed the other ingredients with the potatoes and let them soak overnight. She would turn them every couple of hours so they would all get the flavoring.

my mom is german and the way she makes her potato salad is basically like a regular old potato salad except she adds about a tablespoon of german mustard (smiliar to Dijon), small slices of apples, and a dill pickle finely chopped... she also adds european weiners on occasion (I dont like it) or some smoked or pickled fish like herring (I dont care for this either)

but the mustard and apples and pickles are important.
