I'm looking for a basic chicken salad recipe. It doesn't have to be anything fancy - just good old basic chicken salad. I would really appreciate any recipes you ladies could share with me!

I'll tell ya....for a great basic chicken salad....cube your chicken...add a mix of 1/2 mayo 1/2 sour cream...a little diced celery and a light sprinkle of chopped fresh tarragon and a little minced chives..........delish!!!

you can also do

2 tsp dried chives
2Tbs honey
1 Tbs Dijon mustard
3/4 c mayonnaise
1/2 tsp salt
1/4 tsp pepper
2-3 Tbs minced red onion
and about 3 c chicken


This too is awesome!!

Basic is the following

chicken
mayo
a little thousand island dressing to taste

****

boiled eggs
onions
pecans
grapes
apples

I add any or all of the above.

Add pineapple! So yummy!! And helps to cut down on the amount of mayo you use since it adds moisture. Also, shredded carrotts. I see this as such a yummy lunch that you can add so many things to to get the nutrition rate up...
