This is one of those great recipes you can do 100b diff things with...gret w/chicken,vegetables as a dip etc..really awesome!!
1/2 c butter
1/2 c chopped green onions
1/4 c chopped fresh parsley
2 Tbs flour
2 c cream
4 oz shredded Swiss cheese
4 oz fresh grated Parmesan cheese
salt and pepper
Melt butter over med heat, stir in green onion and parsley, cook til the onion has softened, about 3 min.
Stir in flour and cook for 3 min more, stirring constantly.
Pour in the cream, turn up heat to med-high and bring to a simmer. Once it comes to a simmer, reduce heat to med-low and whisk in the cheeses. Slowly simmer, uncovered, til the sauce has thickened
Season to taste with salt and pepper before serving.
