Coleslaw
1 firm head green cabbage, about 2 pounds
1 large carrot, peeled
1/2 small sweet onion, peeled and chopped fine
1/4 cup diced sweet salad pickles
1/2 cup mayo
1/2 tsp. salt
pinch of black pepper
Remove & discard any bruised or undesirable outside leaves from cabbage. Quarter the cabbage and grate it into a large bowl using the coarse side of hand grater or you can shred it in a food processor. Grate the carrot and add to the cabbage, tossing to combine. Add the onion, pickles, mayo, salt & pepper. Stir together until well mixed. Chill for 1 hr before serving.( I usually let mine chill a little longer)
