this isn't really a recipe, but here is how I make mine. Make a pan of corn bread, mine is a 9" cake pan. After it has cooled crumble on a sheet pan, cover with towel leave out over night or longer, you want it to be pretty dried out. take two boxes of stuffing mix, I use great value corn bread stuffing. mix them in with your cornbread, add very finely chopped celery & onion. My father swore you have to have good homemade chicken stock, but in a pinch you could use canned, it usually takes quite a bit at least 3 cans or 6-8 cups of homemade. Moisten your dressing until soupy, not runny, about like oatmeal. Then add 1-2 Tbls of poultry seasoning or to taste, salt & pepper. Thats it, bake it for about an hour at 350. My sister despises stove top stuffing, but raved and raved about my dressing, she couldn't believe I used it in mine!! She makes her like this now also. This will make a 9x13 pan, so about 6-8 servings at my house at Christmas. I usually double the recipe.

I am all about the cornbread dressing!!!! DH hates dressing/stuffing, but will eat my families cornbread recipe. We make it similar to sshallenbu, but just use cornbread and no stuffing mix.
