Wave Creamy Cauliflower w/Bacon

8 slices bacon, chopped, cooked til crisp and cooled
3 c shredded cheddar cheese
l Tbs chopped fresh parsely
salt
2 cauliflowers, trimmed and cut into florets (about 8 c if using bagged)
4 oz cream cheese
1/4 c heavy cream
1/4 c sour cream
1/2 tsp pepper

Mix bacon, 1/2 c. cheese and parsely,set aside

Adjust oven rack to middle of oven.
Preheat to 350.

Bring 4 qts. water to boil, add l Tbs salt and cauliflower. Cook til tender, about 7 min.Drain and rinse cauliflower w/cold water. Transfer half of cauliflower to cutting board and give it a rough chop.

Melt cream cheeseover low heat, stir in heavy cream and remaining cheese. Cook til cheese starts to melt. Off heat, stir in sour cream, cauliflower, 1/2 tsp. salt and pepper to taste.

Transfer to 2 qt baking dish, sprinkle w/topping and bake til brown and bubbly, about 15 min.

Thanks for the recipe I love cauliflower

Of course I will have to add some saute onions, I have to put onions in almost everything!
