I read this thread with great interest. I, too, have been WAY too guilty of buying lots of fresh produce/meat/fish with good intentions of making healthy meals for the week and then getting lazy with cooking and things go bad so fast.
My goal is to start grocery shopping only when I have time to commit right after I get home to break up the family packs of meat into smaller portions and keep some on hand in the freezer to use later in the week and keep a couple in the fridge to use right away. Also prepping veggies for quick use, maybe even cooking a meal or two right away and having a ready-to-go meal in the freezer for those nights I don't feel like cooking.
Another goal is to REALLY try to meal plan and stick to the plan.
I love the idea of putting leftover cooked veggies and meats into a 'catch-all' container in the freezer and then making soup or stew from it once there's enough to do so. I've never done this before but read about it on another frugal site.
Another idea is to figure out a set grouping of meals that you just always do and so if you stockpile, you know that they are going to be used no matter what because you're already into the routine of making that specific meal.
