I have this cooking right now. I will let you know how it turns out.

1 pkg. (1.4 oz.) TACO BELLŪ HOME ORIGINALSŪ Fajita Seasoning Mix
1/3 cup water
1 lb. boneless skinless chicken breasts, cut into thin strips
4 large cloves garlic, minced
2 Tbsp. chopped fresh cilantro 1 large red onion, chopped
1 small green pepper, chopped
1 pkg. (8 oz.) PHILADELPHIA Fat Free Cream Cheese, cut into cubes
1 lb. (16 oz.) VELVEETA 2% Milk Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
2 cans (14.5 oz. each) fat-free reduced-sodium chicken broth

COMBINE seasoning mix and water in medium bowl. Add chicken; toss to evenly coat. Refrigerate 30 min.

COOK garlic and cilantro in large nonstick saucepan sprayed with cooking spray on medium-high heat 1 min. Stir in chicken mixture, onions and peppers; cook 10 min. or until chicken is done, stirring frequently.

ADD cream cheese, VELVEETA and broth; mix well. Cook on medium heat until cream cheese and VELVEETA are completely melted and chicken mixture is heated through, stirring occasionally.

Made this soup tonight. It was good. No one liked the cilantro. I think I would do only 1/2 of what it calls for next time.

Here is what I did do different

Chicken-had lo frozen roasted chicken that I used
Broth-had lo frozen chicken stock
Fajita Seasoning Mix-just used taco seasoning since I already had it

Directions-sauted everything per instructions except for chicken since it was already cooked.
I finished it all up by dumping it in the crock pot.

I am adding this to my menu next week.I will do it with out the cilantro.The kids don't like it.

What did you serve with it?

I had some frozen shredded beef taquitos that dh had bought a few weeks ago so I made those. Plus the kids wanted to have chips and salsa.

Note: I think that because I cooked mine in the crock pot and it had the lid on it the whole time that it did make the soup watery. I had to thicken it up. I would do it on the stove top next time.

Made this last night for dinner.I used a jar of ragu double cheddar cheese sauce(Still using up the jars of it I had bought when the recipe calls for velvetta).I cooked the onion with it and also diced up fresh cilantro & onion to top it and we also had some southern tortilla stips.Very good

Oh I wanted to add when I was looking through the freezer yesterday I found a dish with 1/2 can of refried beans in it and tossed that in it too.Yummy!
