I actually got this from my mom. She use to make it all the time when we were kids, it never really had a name. I named it Shrek Soup one night when the kids where watching the movie (the first one) and Shrek was just sitting down to eat dinner. I called everyone to dinner and the kids all turned their noses up at it and said that they didnt like it. My five year old asked what it was so I just quickly named it Shrek Soup. Once it had a name, they all tried it and liked it.
This is a good soup for cold winter nights when money is tight.
1 lb. hamburger, cooked and drain
potatoes- 3-5 medium potatoes or as many as you think everyone will eat. peel and cubed.
1-2 cans of green beans
tomato sauce-2 cans 15 ozs. or more depends on how much you like it to have a strong tomato taste
salt and pepper
In large soup pot, boil potatoes until they just start to get cooked-poke with a knife. Drain water-reserved it for later. Add potatoes back into pot, and add hamburger, green beans with liquid and tomato sauce. Add potato water until the soup is the right tomato taste for you. Add salt and pepper to taste. Heat until everything is hot.
