Meatball Alphabet Soup

Meatballs:
1/2 cup bread crumbs
1/2 cup parmesean cheese
2 tablespoons onions, minced
2 garlic clove, minced
2 tablespoons parsley
2 teaspoons basil
1/2 teaspoon salt
1/2 teaspoon pepper
1 large egg, lightly beaten
1 pound hamburger
Mix all ingredients in a large bowl. Use hands and form into 1" balls. Should make about four dozen. Heat skillet with some amount of oil. Place meatballs in skillet and cook them over medium heat for 8-10 minutes. Turning frequently to brown evenly and until centeris only slightly pink. Set aside.
Soup:
2 tablespoons olive oil
1 small onion finely chopped
1 garlic clove, minced
2 celery stalks, chopped
5 cups chicken stock
1 cup crushed tomatoes in puree
1/2 teaspoon salt and pepper
1/3 cup alphabet pasta, dry
To make soup, heat oil in large soup pot. Add in the onion, celery, and garlic. Partially cover the pan and cook veggies over moderate heat for 8-10 minutes, stirring occasionally. Add chicken broth, crushed tomatoes and spices. Bring soup to a simmer over medium heat, than add pasta. Keep soup at gentle simmer until the pasta is almost cooked, than add meatballs to soup pot and simmer for 3 more minutes to finish cooking meatballs.
