Tomato Soup N Pesto

the ultimate w/grilled cheese...

1 (32oz)chicken broth
1 (14.5)diced tomatoes with juice
1 (14.5)diced tomatoes with garlic and onion
1 c half-and-half cream
salt and pepper to taste
2 Tbs basil pesto

Pour broth into a large saucepan,bring to a boil. Boil until reduced by about 1/3.
Pour in both cans of the tomatoes, and return to a simmer. Pour in the half-and-half, and turn heat to low. Simmer 15 min.
Puree in batches in a blender,or use stick blender .
Season with salt and pepper to taste.
To serve,swirl in a spoonful of pesto into each bowl.:happy dance:

would prob be ok...just wouldn't be as rich(or as fattening depends on ha ya look at it )

I made a cheater version over the weekend. I actually started w/ a can of tomatoe soup (how's that for cheating!) I added pesto, chopped tomatoes, garlic and I used skim milk. It was really, really good.

good job....I too like to use recipes more as almost a "guide".

And it's helpful to know cause tomato soup was on sale today,and I had coupons to boot so I bought 20 cans :happy dance:
