1 Pkg {1.8 Oz.} Leek Soup Mix {knorr}
2 1/4 Cups Water {recipe Calls For Water, I Use Chicken Broth}
1 1/2 Cups Milk
1 Can {14.5 Oz} Whole New Potatoes, Drained And Cut Into Small Cubes
1 1/3 Cups French Fried Onions, Divided
2 Tsp. Fresh Thyme Leaves, Or 1/2 Tsp. Dried Thyme Leaves
Ground Black Pepper, To Taste
Sour Cream
Parsley, To Garnish
Combine Soup Mix, Water {or Broth} And Milk In Large Saucepan; Whisk Until Well Blended. Stir In Potatoes, 1 Cup French Fried Onions, Thyme And Pepper. Bring To A Boil Over Medium-high Heat. Reduce Heat To Low. Simmer, Uncovered, 10 Minutes, Stirring Occasionally. Ladle Into Individual Bowls, Top With Sour Cream, Parsley And Remaining Onions. Makes 4 servings.
