Default Cream Cheese Potato Soup (Panera Clone)

4 c chicken broth
4 c potatoes, peeled and cubed
1/4 c onions, minced
1/2 tsp season salt
1/4 tsp white pepper
1/4 tsp ground red pepper
1 (8oz)cream cheese, cut into chunks
crumbled bacon
minced chives
cheddar cheese

Mix broth, potatoes, onion, and spices.
Boil on med til potatoes are tender.
Smash a few of the potatoes for thickening.
Reduce to low heat.
Add cream cheese.
Heat, stirring til cheese melts.

Spoon into bowls and top w/bacon,chives and cheese

HONEST TO GOODNESS THIS STUFF IS AWESOME...

I made this today. UM GOOD. I have never had potato soup but love potatoes (well Red potatos). This is added to my recipes. THANK YOU THANK YOU

I did add a little garlic to it, but that's just because we LOVE garlic.

I like the sounds of this one. I have a recipe for baked potato soup that is amazing, but it calls for something like 4 or 6 cups of milk!! This would be much more cost friendly since you get the creamy goodness from the cream cheese.

Can you tell me about how much does this make and does it reheat well?? Thanks!

We did not reheat it because we didn't have any leftovers. I would say make a double batch, not sure is that would leave you which much leftovers though.

This serves bout 4...maybe 6...depends on your family really...last time I made it 2 adults and 2 kids killed it.

This soup was really yummy. I would suggest keeping a close eye on the potatos. When I added my cream cheese the potatos kept mushing because it took a little bit for the cream cheese to melt.
