I could not get over the chicken in chili when I made it.It had a great taste.I guess I am used to burger.Everyone liked it for something different.It has a great creamy texture.

White Chili~

1 (16 oz) bag Great Northern Beans, pre-soaked
1 large chicken breast
1 cup medium salsa
1 (14.5 oz) can corn
1 large onion, diced
Salt, pepper, cumin to taste
1 (8 oz) package Monterey Jack cheese
Sour Cream
Tortilla Chips


1. In a large stockpot, cover beans with just enough water to cook them in. Add chicken breast and let simmer for one hour. Be sure to check on the amount of water that is covering the beans. If it gets too low, add another cup of water.

2. Add salsa, corn, onion and spices to the pot. Simmer for another 30 minutes.

3. Turn off your burner, add cheese, and allow chili to sit for at least 10 minutes. Stir to ensure that the cheese has melted.

4. Serve with sour cream and chips for dipping.

Your Welcome.You can cheat like I did and buy one of those really big jars of Great Northern Beans alread cooked and I added the beans and juice to it instead of messing with the dried ones and it was the same price.

mine is just a little different..

I use the glass jars of Randall Northern Beans (takes less time, since the beans are ready)
1-2 lg chicken breast- cubed and browned (I also use left over chicken sometimes)
1 sm onion diced and cooked with chicken
1 sm can jalap peppers diced
1 can corn
Salt, pepper, cumin, garlic powder to taste

serve with sour cream, jalapinos, shredded cheese, ketchup (my dh insist)
