2 Tbs butter
1 onion, chopped
1 garlic clove, chopped
1 stalk celery, chopped
2 cans chicken broth
4 c broccoli
3 Tbs butter
3 Tbs flour
1 1/2 cups milk
1/2 c evaporated milk
1/2 tsp pepper
3/4 c velveeta cheese
Melt 2 Tbs butter in stock pot,saute onion, garlic and celery til tender.
Add broccoli and broth; cover and simmer for 10 min.
Puree soup (I use stick blender).
Return to heat.
In another pan melt 3 Tbs butter, stir in flour and add milk.
Stir til thick and bubbly, add to soup.
Add cheese,stir til melted.
Season with pepper and serve with a good crusty bread.
