Cauliflower Cheese Soup

4 c chicken stock (or water)
2 c chopped potatoes
1 head cauliflower, broken into flowerets
1 c chopped onions
1 c chopped carrots
3 cloves garlic, minced
2 c shredded sharp cheddar
1 1/2 tsp salt
1/4 tsp dill
1/4 tsp dry mustard
1/8 tsp white pepper
3/4 c milk
Combine stock, potatoes, cauliflower, onion, carrot and garlic in large pot.
Bring to a boil.
Simmer 15 min,til veggies are tender.
Remove from heat and let cool 15-20 min.
Puree in food processor or use stick blender.
Return to pan and stir in remaining ingredients til cheese melts.
