1 celery rib,minced
1 small onion, chopped
1/4 c chopped green pepper
1/4 c chopped sweet red pepper
1 Tbs vegetable oil
1 Italian sausage link, casing removed
1 (14.5)can stewed tomatoes, undrained
1 can kidney beans, rinsed and drained
1 c water
5 Tbs tomato paste
2 Tbs chopped green chilies
2 tsp chili powder
1/4 tsp salt
1/4 tsp pepper
1/4 c shredded Cheddar cheese
Saute celery, onion and peppers in oil til crisp-tender.
Crumble the sausage into a skillet and cook til done,drain.
Stir in the rest of ingred and bring to a boil.
Reduce heat,simmer, uncovered, for 20-30 min,til thickened.
Sprinkle w/cheese and serve.
I also like to add sme chipotle in adobo sauce for a lil extra kick.
