Ham and Bean Soup

My church is having a Bean potluck to raise money, and they asked me to make several batches of this. I use to make this every Tuesday at the cafe and it always sold out, no matter how much I made! I have also made this in a crock-pot and it turn out awesome!
1 1/2 cups chopped ham
1 cup chopped onion
1 cup chopped celery
1 teaspoon garlic salt
2 teaspoons salt
3/4 teaspoons black pepper
3 1/2 tablespoons oil
5 3/4 cups water
1 pound great northern beans
Soak beans in water overnight. Sauté ham, onion, and celery in oil. Add to beans. Cook approximately 3 hours. About 20 minutes before done, add salts and pepper. Remove 2 cups of beans, mash and return to beans. Heat through.
