Actually what you are doing helps sooooooo much. More than one would realize. I do the same, except that I get the produce for free from a program called Food Net that I run here. (I'll explain what it is to anyone who is curious, but I know from research that there isn't another program in the country like it. Sorry! Sure would be nice if there was though.) I take all my veggies and chop them into a freezer bag every week. I literally have 1 gallon bags in my freezer of green onions, peppers, celery, carrots, etc. When ever I want something for a casserole or soup or whatever, I just grab the bag and toss into the pot whatever I need. Cuts down on time spent in the kitchen preparing meals too.
The same can be said for fruits. In fact I made up several loaves of banana bread to give out for Christmas this year by freezing bananas as I got them. Come time to bake, I simply had to pull the bag and thaw it.
I've also discovered by doing this that we eat healthier and I am willing to do more cooking from scratch vs. buying boxed or canned. That translates into saved money alone.
Now take your idea one step further and do the same with any garden produce you can get during the gardening season. Even if you don't grow your own garden, you probably know people who do garden, and most are more than willing to share their abundance if you ask.
