I don't think that's extreme at all.

That's pretty much what I do. I cut the good parts off and sprinkle a little lemon juice on to keep it from browning. It usually goes into her lunch for the next day.

I have also been buying the pre-bagged apples...they seem to be smaller and she will usually eat a whole one.

I usually do the every man for himself night but with a twist. My children tell me they hate leftovers so I conveniently make it a party so they don't really think about it. First, I set up the table to look like a restaurant at one of the all you can eat places - then I tell them to come through the buffet line I have out on the kitchen counter and take what they want. They are allowed to take as much or as little as they want. We do this on Saturdays for lunch. I will "stop by" their table to refill their drinks (I wear my apron and act like a waitress) and check on them. When they finish I clean up after them - (usually they have to do this themselves). Whenever they want a snack during the day, they come back to the "cafe" to pick something and for dinner I make a menu of whatever is left (sometimes I have to add to it or be creative and mix stuff up to make something different). They are allowed to choose from the menu their dinner which is served by candelight with a waitress of course.

Usually they love to eat leftovers this way and look forward to Saturdays when they are served. My 3 year old always wants the silly waitress that makes faces when it is dinner time.

This is a brilliant idea, and I just might have to be a copy-cat sometime!! I think this would go over real big, when the kids have a friend over!!

I also wanted to add, there are only 2 things that I make for dinners, that I always make extra of: my meatloaf and anytime I make homemade soups. I usually make my meatloaf with 2lbs. of ground meat. We'll have it for supper one night, and then I'll make meatloaf sandwiches for Brian's lunch for the week. I usually try to make this on a Sunday or Monday, so it'll get used up. Brian has told me on several occasions, when he's been asked to go to lunch with the guys and he tells them that he has a packed lunch, when he tells them he has a meatloaf sandwich, they all tell him what a lucky b***ard he is!! That always makes me feel good!! And with the soups, I usually make enough to feed a small army, so we'll have it for supper, and possibly lunch, and then I freeze the rest to use later!
