This month's challenge is "Don't throw that away". See if you can go a whole month without throwing any food away.
1. Go through your refrigerator and pull things closer to the front that are going to expire. Are those eggs getting close? Hard boil them for salads, bake something, make scrambled eggs.
2. Go through your pantry/freezer to make sure nothing is close to expiring.
3. Incorporate using leftovers in your menus throughout the week.

If anyone has trouble coming up with a way to use up a certain food item post it here. We can brainstorm an idea or new recipe for you to use it in.

It's been posted elsewhere on MS but it would be nice to post ideas here for using up leftovers.

Chili : leftover chili is usually better anyway the 2nd time around, chili dogs
Pancakes : freeze them, pigs in a blanket
Mashed potatoes : shepherd's pie
Leftover vegetables: chicken pot pie
Meatloaf : meatloaf sandwiches

We are constantly throwing things away here. That equals to a lot of money wasted. So this is just what I needed.

Same here....we really do waste a lot of food, and there simply is no excuse for it.

I had a loaf of bread that was on it's way out (starting to near the date on bread bag) so 2 days ago we made french toast for supper. I put the leftovers in the refrigerator and we ate them for breakfast this morning.

Bananas!! I lose 1-2/week. Sometimes they brown too quickly. My kids don't eat banana bread (and I do - but that isn't always low fat). Any other suggestions. I have tried to put them in front of the kids but they don't like them mushy. Then, on the weeks I buy less - they beg for them. So - what else to do with brown bananas?????

I am the leftover queen. I eat leftovers every day if I have to, even if it's the same thing for 3 days in a row, lol. If there are too many and I don't know if I will get them eaten within 3 days, I put some in the freezer. I am learning how to make less for meals, though. My husband and I could eat a meal for 6 people all by ourselves, lol. I figure we can have less at suppertime and it's no big deal to make a sandwich or some popcorn later in the evening if we get hungry.

I have an idea for your bananas (we have the same problem in our house). You can cut them up, put in some aluminum foil with a little butter, brown sugar and cinnamon, then put them on the grill until warm and mushy. Top with ice cream.

Yum!!

More banana ideas:

1. Freeze them
2. Banana bread or muffins
3. I put mine in a recipe for Oatmeal Cookie Pancakes
4. Take a tortilla wrap. Spread with peanut butter and jelly. Add banana and roll up.
