Sounds yummy. I also received the 2 recipes the other day and was going to make these as some teacher gifts
No-Cook Mint Patties
1/3 cup light corn syrup
1/4 cup butter or margarine softened
1 teaspoon peppermint extract
4 cups sifted powdered sugar
2 drops green food colring
2 drops red food coloring
In a small mixer bowl combine the light corn syrup, butter or
margarine and peppermint extract beat until well blended.
Gradually add 2 cups of the powdered sugar, beating well. Stir in
as much of the remaining powdered sugar as you can mix with a
spoon. Turn out onto a surface lightly coated with a little
powdered sugar. Knead in enough of the remaining powdered sugar to
make a stiff dough.
Divide the dough into thirds. Using one third knead in red food
coloring. Knead in the green food coloring in the second and leave
the third one white. Shape the dough into 3/4 inch balls place 2"
apart on baking sheets lined with wax paper. Press with the tines
of a fork. If necessary dip the fork in powdered sugar to prevent
sticking.Let air dry several hours.
The only thing my daughter warned of it is very sticky but it is
workable
Cream Cheese Mints
6 oz. cream cheese
3/4 lb. powdered sugar
1 tsp. mint to flavor or to taste
Food coloring
Combine cream cheese, powdered sugar, flavoring and food coloring and mix with hand mixer until stiff. Roll into small balls. Dip in sugar, then press in to sugared mint molds to make shaped mints. you can use also divide this and tint with food coloring. I usually make red, green, yellow, and white
