Frugal coworker brought this as leftovers for her lunch. She took cooked taco meat and placed it into a pan. Topped it with corn bread muffin mix and baked it till corn bread was done. Then she served it with salsa and sour cream.

I think my new favorite is dried beans. It is really easy to make a soup with them in the crockpot.

I do something very similar, except mixed in the meat is corn and rotel tomatoes! mmmmm, I call it "hamburger corn pie"....original huh? lol

Soups is a great strecher in our home. Tonight I'm making roasted chicken, tomorrow chicken noodle soup. The chicken I have left I'll freeze and use for another casserole or soup in the future.

Spaghetti, made using canned sauce and include gralic bread. If I have left over sauce I will save and use it in lasgna.

Using old stale bread to make bread pudding.

But I'm still learning and love to hear others ideas!

I take a can of the canned stew (Dinty Moore) and serve that over rice. This stretches really far.
Put a can of beans with spaghetti sauce and serve over rice for Beans and Rice.
I will try the pinto beans and cornbread this weekend!! Sounds good and easy!!
