Made Oregano's mix last night and added 1t of grated orange peel to the mix. DD made her pancakes this am adding 1t of vanilla to the recipe. They were GREAT (I had to have a taste!).
Thanks everyone for all the hints. I'm going to keep missyid's recipe on hand too -- I have powdered milk, eggs and butter in my "just in case" stores.

I also make my own instant hot chocolate mix rather than buying Swiss Miss, etc, and keep a bag of mini marshmallows in the cupboard. Would be glad to post the recipe if anoyone's interested.
PS: Spoodler, can you post your muffin mix?
