Has anyone tried this? I used to buy Bisquick all the time so dd could make quick pancakes for breakfast in the am. I'm almost out, and was thinking of trying to make my own by mixing up several servings worth of dry ingredients and storing in an airtight container. Then, in the am, she could just add the milk, eggs and oil and have pancakes.

Anyone had any good/bad luck with anything like this?

Gosh, I gave up Bisquick years ago. I started looking at the label and the ingredients bothered me. I do from scratch anytime that I want these things. Like cornbread, I think it is just as easy to and quick to mix it up on the spot as to open a box. A few more things to clean up but not a significant burden.

If you have a recipe that lets you use oil instead of shortening, I think that the dry stuff could be done some in advance, but not too far. I wouldn't want to cut in shortening and then not use it soon. but I could be wrong. Maybe others know more.

Yes...I make them homemade, I've never used Bizquick for anything actually...just not my thing.

I make up this mix and keep it in an airtight jar. Then it's just about 1 C of mix, 1 egg and about 1 C of milk (just depends on the batter consistency you like, I like mine a little on the thick side) to make pancakes.

PANCAKE MIX

4 C All Purpose Flour
3 T Baking Powder
2 tsp Baking Soda
1 tsp Salt
2 T Sugar

When you're ready to use it, just beat up one egg in a bowl...add one cup of the dry mixture and one cup of milk. You can also add some melted butter (or oil)- 1 T or so...I just eyeball it. Don't overmix the batter.

My sister uses Alton Browns recipe for pancake mix...

6 C All Purpose Flour
1 1/2 tsp Baking Soda
3 tsp Baking Powder
1 T Kosher Salt
2 T Sugar

Combine all of the ingredients in a lidded container. Shake to mix. Use the mix within 3 months.


"INSTANT" PANCAKES:
2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter
2 cups "Instant" Pancake Mix
Butter or Oil (for pan)

Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.

Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.

As a side note, I also mix up the dry ingredients for muffins and keep them in the cupboards in individual tupperware containers. When I am ready to bake I just add the milk, oil, and egg and whatever mix-in I want in the muffins that day. Sometimes I use chocolate chips, chopped cherries, chopped fresh fruit, cinnamon sugar, nuts, etc.

It is just like buying the mixes in the store...

I have a great healthy whole wheat/grain pancake AND waffle mix recipe. Trust me the kids will love it!!

1 1/2 C old fashioned oatmeal (not instant)
1 1/2 C whole wheat flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp salt
1/3 C sugar

Grind the oats in a blender or food processor (I use my Silver Bullet) until fine. In large bowl combine the oatmeal and the rest of dry ingredients. Store in two thick large plastic freezer bags (by 2 I mean doubled up) Store in the refrigerator.

When ready to use, simply put 1 and 3/4 C dry mix into a bowl, add:

1 1/4 C buttermilk or sour milk (add 1 1/2 tsp. white vinegar to milk and mix up)
1 egg, beaten
2 T melted butter or vegetable oil (I use EXTRA LIGHT olive oil, never reg. or extra virgin)

Do not overmix.

The dry portion will make two batches, the milk/egg/oil proportions is for one batch.

There is a way to make buttermilk at home as a substitution. It's either 1 tsp or 1 Tbsp of vinegar in a one cup measure. Add regular milk to fill. Let sit for 10 minutes or so. Does anyone know if it's 1 tsp or 1 Tbsp? If not I'll look in my cookbook later and get back to you.

We found one we just LOVE. It is easy to mix a batch and best of yet uses powered eggs and powered milk so you dont have to panic if you go to the fridge and dont have either on a Saturday. Saves a mad dash to the store and saves us money.
Recipe:

Ingredients:
4 cups of flour in a bowl.
To that I’ll add 1/3 cup of powdered eggs.
1/3 cup of powdered butter.
1/3 cup of instant powdered milk
1/3 cup of brown sugar
1 tsp baking powder
dash of salt

When you are ready to use get 1 cup water and half cup mix and you are ready. Might need to adjust the above mix a little to get the right thickness you want.

It's one tablespoon...you can use white vinegar or lemon juice.

You can also buy that powdered buttermilk, which is great to have in the pantry.

I've dumped in all kinds of things for pancakes...sour cream, plain yogurt etc Just tailor it to what you like!
