Hi..I just ordered a cookbook that I LOVE..It is called More-With-Less Cookbook and it is about how to eat better and consume less of the world's resources by buying and cooking simple, nutritious food with great recipies..It truely is low-cost and the recipies are easy enough for even me ( who can barely cook )!! A quote from it that really hit home was this.."Although North Americans complain loudly about the increase in food prices, we are probably the least affected. Over the past fifteen years, the average American family has spent sixteen to eighteen percent of it's take home pay for food. People in Third World countries like India. Ethiopia, and Haiti where food is always in short supply spend from seventy to eighty percent in normal times. When times are bad, all of the family's earnings go for food, and still hunger stalks."

Thanks for the heads up! I had not heard of this cookbook - just requested it from the library. Yesterday, I was just talking to DH about trying to create a healthier diet for our family while still staying within our limited food budget. Hopefully this can help!

I was just thinking about this tonight.. how sometimes it costs more to eat healthier and I am always looking for simple, low-cost food that is nutritious too.

Plus, I also can barely cook. lol. Thanks for the recommendation.

And I understand what you mean about the sobering quote. I feel awful knowing that this earth holds the potential to feed EVERYONE yet so many go hungry.

I've had this cookbook for a couple of years and I've used it pretty frequently. It's one of those that doesn't require a lot of ingredients for each recipe and everything is truly homemade...no convenience foods. I make the homemade pudding out of this cookbook and my kids love it. It's healthier than store bought and it actually only takes about 10 minutes to make after you've made it a couple of times. Anyway, I highly recommend this cookbook to those of you wanting to make homemade food for your family with very little money!

We Americans are very fortunate that we have options and reasonable priced food. They say that underlying this plentiful bounty is the concept of private property and property rights. Thiose places that don't have it like the old Soviet communism, led to lines, shortages and high prices. When people own their own plots, keep what they earn, and get to choose which products tobuy, the prices stay low and choices abound.

I guess that I do complain too much about prices.

I love this book, too! This summer I started shopping for all of my vegetables at a local farmer's market, and I have been buying vegetables that I have never tried before, and this book has been able to help me figure out how to cook them all. There is a Sweet Potato/Apple/Sausage casserole that is to die for - my kids can't get enough of it! There is also a great variety of recipes from arouond the world. My husband is from Puerto Rico, and he had been craving Arroz con Gandules (rice and pigeon peas) and I could never find a recipe for it, but sure enough, this cookbook had it!

The mindset behind the book helps you to support both frugality and sustainability, and helps to reduce the clutter in your pantry, to boot!
