I also make a menu but each meal is not assigned to a particular day. I keep a list of all the meals I can make with what I have on hand and I decide in the morning what we will be having. My list almost always includes things like: Soup & grilled chesses, Breakfast for dinner, omelet, pasta salad, etc. The list is usually good for up to 2 weeks.
I buy fresh vegetables but I also keep frozen veggies for those days I don't have time to prepare fresh ones.
I also have a list of the main dishes we like, this helps alot when I need ideas.
I'm up for the challenge because I want to update my menus with new recipes. I want to include fish a least once a week & more beans instead of meat. We need to lower our grocery bill but I still want us to eat healthy.
