Default What do you eat for lunch?

I am trying to get ideas for things to eat for lunch at home. I am really good about planning out our meals for dinner, but when it comes to lunch I am always stumped with what to buy and what to eat for lunch. Sometimes I'll get really inspired to make nice salads (or something like that) for lunch so I'll buy a bunch of lettuce and other veggies and salad fixings and then I don't make it and it ends up going to waste.
Also, I have a 6 month old dd, so sometimes it's a challenge to find a minute to actually make something and sit down and eat it. So I need easy, but I also want good - I don't want to eat PB&J every day.

We have dinner left-overs or Smart Ones (WW frozen dinners). I try to keep the frozen dins to a minimum (too much sodium) but in a pinch, it's what we have. I have found that if I get romaine lettuce hearts, chop them up, and keep them in a crisper, salads get eaten. I guess it's psychological, I see chopped lettuce...I make salad. Hmmm...I sound very pavlovian.

We eat mostly leftovers for lunch. I always make extra for supper because I know I'll eat it for lunch the next day (or two) and we also have a leftover night once or twice per week.

If I'm making something big, like a lasagna or baked spaghetti, I'll sometimes make two of them (it takes the same amount of time, just more food to cook) and freeze one in lunch-size portions to keep in the freezer for the days when I might not have any leftovers, or they work for an easy supper if we get tied up and supper doesn't get cooked. It's like a homemade TV dinner. LOL

I always keep several cans of tuna in the cupboard for when we don't have leftovers, or if leftovers just don't sound good. Then I'll make up a tuna salad sandwich and have that. I used to buy deli meats for this purpose, but I rarely finished a package before it went bad, so tuna works better for that reason. Egg salad sandwiches are another good one, or plain egg sandwich are other favorites.

Grilled cheese and tomato soup ...YUM.

I also make extra waffles with our waffle machine and freeze them. Then we can just pop them in the toaster for a quick breakfast or snack.

I do this with DD's tacos too. She eats tacos that have shredded chicken (no seasoning), shredded cheese and green olives. I make 20 or 30 at a time and freeze them for her. Then we just warm them up when she gets hungry. (She is very picky and this is her favorite food, so we try to keep it on hand for after school snacks and weekend lunches). She eats green peppers or cucumbers with them...I just keep the veggies cut-up and ready to eat in the fridge.

I eat alot of Ramen Noodles. I have to doctor them though. I drain off the water, add a little milk and butter... not bad but I need ideas too. Ramen Noodles everyday is boring.

Leftovers! Sometimes I will make extra and freeze them in small portions for DH and I to eat for lunch. Lasagna is a favorite of his. I'll eat just about anything - I'm a garbage disposal It's also very cost effective and you waste less by freezing the extras - because I know people can get sick of eating the same thing for three days!

We usually eat leftovers if we have them. If not, we eat soup, sandwiches, salads, yogurt. Whatever seems appealing at that time. On the very odd occasion, I'll put a frozen pizza in the oven for DD and I.

we eat
1.leftovers
2.salad
3.baked potatoes with salsa
4.cottage cheese and ham sandwiches
5.soup
6.bagel cream cheese carrot sticks and dip
7.we do like a mini lunchable but we make it ourselves since lunchables have tons of sodium we and control whats in it we use ham chunks mini crackers and some cheese like munster provalone colby jack ect
8. we do grilled cheese but we use a nicer cheese than american like munster provalone colby jack a peppered cheese
9. grilled chicken wraps(when i buy chicken breast i cut them into strips then freeze them so when i get them out i can quickly cook them in a pan and add to a trotilla with the fixings another good way is to buy a whole chicken cook in your croc pot then shred the chicken and freeze in small amounts to make chicken salad sandwiches wraps ect quickly)

We eat leftovers. I also make a salad on sunday and grill chicken on the weekend when we grill out. I will add some chicken to my salad at lunch. The salad lasts a couple of days and then I try to make another one.
