I use her recipes more often than not and have never thought they were unhealthy. I don't make all of them all the time, but her spaggetti sauce recipe is awesome and I omit the oil. Her cookies are made with whole wheat flour, etc. Also, when you read the recipes, she will usually tell y ou what she serves it with. There is always a veggie or fruit with it for a meal. Also, her $45 a week menu has a disclaimer on it that says this isn't for everyday, this is for use when you are in a tight bind to get you thru til grocerys can be bought again. Her $70 menu would be more for everyday. I love the site and use it for many recipes and tips on frugal living.

I don't think her site Claims " Healthy Eating" Does it? I think it is About Saving money and Feeding your Family For Less. Of Course we would All Love to Eat everything Super healthy Ecspecially For our Kids .... BUT In Times Of Money Being tight , What else can you Do??
I think The ones Who Are saying it is So Unhealthy are The ones Who Never Had to Feed a Family On a Small Grocerey Budget And God Forbid Forgo All the Healthy foods that Week.

***the one thing i noticed is that the simpler the meal, the more frugal it is.
my mom cooks extraordinary! super good! really...but....they are more involved recipes...too many ingredients so they are more expensive.

I usually cook a veggie (whats on sale) and chicken or fish or tofu
rice/pasta are usually free with coupons
all else i buy free/almost free with coupons.
I actually think frozen veggies are better then fresh sometimes, b/c they are frozen right away and aren't sitting on the shelf or in my fridge for awhile before we eat it.

I have got to try tofu with my son. I keep hearing about how much kids like it. I'm putting it on my shopping list. Can you ever find it on sale? I don't have a clue how much it costs.

I've been thinking a lot about the starch thing, and I realize that I should probably switch to whole wheat pasta, brown rice, etc. I agree with those who say many frugal meals (hillbilly included) have more starch than anything else. I got so used to using white rice and noodles with my meals that I never really thought about it. (I bake my bread with half whole wheat/half white.) I'm a little concerned that whole wheat pasta and brown rice will increase our budget, but I can cut other things out to make up for it. I can't stand the taste of brown rice, but The Homestead Kitchen I think has a recipe for making it more palatable.

Hmm...we shall see how this flies in my family.

I think the Hillbilly Housewife is pretty good- there are tons of Ideas and things to do in a pinch-
I am all for cooking from scratch I think that is more important sometimes than worring if you used shortening My family is in love with the homemade ricearoni from that site- i have adapted it to our tastes and less salt... but then again i grew up with a frugal hippie mom- LOL dandelion tea and the like.. I am more of a frugal paula deen type- LOL

i agree.

This is the one:

Beef Style Ricearoni Mix

I usually use basmaiti rice- we buy the 10 lb bag from sams - it lasts us about 8 months- I cook rice about 2 times a week-
I have made the above recipe- non-stop- but BUT i use my own spices to taste
